March 26, 2020–I Literally Had a Lump in My Throat…. But, Cookies Fix Everything {Recipe}

COOKIES fix everything! Especially homemade, organic, dairy-free and zero butter! 🎉🍪 Tonight, we started on our retaining wall. When we go to do the dirt work for our cabin, we do not want any dirt covering our favorite rock formations. So… we’ve decided to use the trees we cleared from our build site for a retaining wall to hold the dirt in place. We are excited to get our site prepped for construction! 🔨 🚧 Also— it’s pine cone season. Falling pine cones have already given me 2 panic attacks haha thinking they were bears waking out of hibernation. Luckily—nope!! Just synched falling pine cones that mimic the sound of walking animals in the brush 😩😂 🐻 ❌

If you missed my live video, here is the recap: basically our old GC was not completely honest about our loan. He told us he talked to our loan company and they said they are no longer lending to anyone in our state. So we’ve been wasting time trying to find a new VA construction loan when in reality, they are absolutely still lending to builders in our state—just not him. We’ve literally wasted 3 months of time we could have been building 😭. I also blame myself- I should have fact checked directly with our lender instead of letting our GC lead. But again, cookies fix everything and WISDOM cures all!

Here is the recipe for those asking:

1 cup avocado oil
1 cup organic sugar
1 cup organic brown sugar
Cream all those together
Then add 2 eggs (or egg sub if doing vegan)
Then add 2 teaspoons vanilla
Then grab a small bowl and mix 2 teaspoons hot water with 1 teaspoon aluminum-free baking soda (we use Bob’s Red Mill)
Add it to the mixture + stir
Then add 3 cups organic flour
Then add chocolate chips to taste (we use Enjoy Life brand. They are gluten-free, dairy-free, soy free, peanut-free, etc and taste amazing)

Bake at 350 on un-greased cookie sheet for 10 min!

      Pro tip- chill the dough in the freezer for 10-15 min before baking. This helps them stay fluffy + moist!!
